
The Navarra Lamb PGI differentiates two types of animal: baby lamb, with tender meat which is mild in taste and succulent, and pink or pale pink in colour; and milk-reared lamb, with very nourishing meat, pink in colour and an even more pronounced taste than the baby lamb because of its larger size and age.
GEOGRAPHICAL AREA
Lambs covered by the Cordero de Navarra / Nafarroako Arkumea (Navarra Lamb) PGI may be either the Navarra breed or the Latxa breed. The Navarra breed lambs are born, raised and fattened mainly in the regions of the Ribera, Zona Media and Cuenca de Pamplona. The Latxa lambs are to be found in the northern part of Navarra.

BUYING GUIDE
There are three types of Navarra Lamb on the market: Latxa baby lamb, identifiable by the red tag and a label attached to each quarter, Navarra breed baby lamb with a yellow tag and label for each quarter, and milk-reared Navarra breed, which has a blue tag and a label on one of the rear legs and a stamp throughout bearing the initials NA.
